black beans
Serves 2

These aren’t your ordinary black beans! You spice them up a little bit with garlic, tomatoes, peppers, onions, sour cream and hot sauce.

Baking the beans in the oven with butter and sour cream brings out the awesome flavor and creamy texture of this dish!

Ingredients:

  • 1 can black beans (frijoles negros)
  • 2 cloves garlic (minced)
  • 1 small yellow onion (chopped)
  • 1 medium tomato (diced)
  • 1/2 medium sweet red pepper (diced)
  • 4 tablespoons all natural sour cream
  • 2 tablespoons unsalted butter
  • 1 tablespoon salsa
  • Dash of Cholula hot sauce
  • 1 cup shredded Monterrey jack cheese
  • dash of salt
  • dash of pepper

Preheat the oven to 400°

Drain the black beans but do not rinse.

In a medium ceramic bowl add the black beans, garlic, onion, tomato, sour cream, butter, hot sauce, salsa, salt and pepper and gently mix the ingredients until the black beans are evenly coated.

Place the ceramic bowl uncovered on the medium rack
in the oven and bake for 45 minutes, stirring occasionally (every 10
minutes or so)

Carefully remove the black beans from the oven and enjoy!
